Ingredients

  • 1/4 cup oil
  • 1 onion, finely chopped
  • 2 Tbs yellow curry paste
  • 8 oz potato, diced
  • 8 oz zucchini, diced
  • 5 oz red pepper, diced
  • 4 oz beans, trimmed
  • 2 oz bamboo shoots, sliced
  • 8 oz vegetable stock
  • 14 oz coconut cream
  • salt
  • Thai basil leaves, to garnish

Steps

1) Saute onion over medium heat for 4-5 minutes until slightly golden. Add curry paste and cook/stir for 2 minutes until fragrant 2) Add vegetables and cook/stir on high for 2 minutes. Add stock. Cover and simmer 15-20 minutes until vegetables are tender. 3) Cook uncovered on high 5-10 minutes to reduce sauce. 4) Add coconut cream and season with salt. Simmer for 5 minutes, stirring frequently. 5) Serve & garnish with basil leaves.
