Ingredients
- 1/4 cup oil
- 1 onion, finely chopped
- 2 Tbs yellow curry paste
- 8 oz potato, diced
- 8 oz zucchini, diced
- 5 oz red pepper, diced
- 4 oz beans, trimmed
- 2 oz bamboo shoots, sliced
- 8 oz vegetable stock
- 14 oz coconut cream
- salt
- Thai basil leaves, to garnish
Steps
1) Saute onion over medium heat for 4-5 minutes until slightly golden. Add curry paste and cook/stir for 2 minutes until fragrant
2) Add vegetables and cook/stir on high for 2 minutes. Add stock. Cover and simmer 15-20 minutes until vegetables are tender.
3) Cook uncovered on high 5-10 minutes to reduce sauce.
4) Add coconut cream and season with salt. Simmer for 5 minutes, stirring frequently.
5) Serve & garnish with basil leaves.
