Ingredients
- 2 Tbs oil
- 1 onion, sliced
- 400 mL coconut cream
- zest of 1-2 limes
- 500 g firm tofu, cut into 2 cm cubes
- 1 Tbs lime juice
- 1 Tbs Thai basil, shredded
- Curry Paste:
- 10 small green chillies
- 50 g shallots, peeled
- 2 cloves garlic
- 1 cup (45 g) cilantro
- 1 stem lemongrass, white part only, chopped
- 2 Tbs fresh ginger, grated
- 1 Tbs ground coriander
- 1 tsp ground cumin
- 1 tsp black peppercorn
- 1/2 tsp ground tumeric
- 1 Tbs lime juice
Steps
1) Combine ingredients for curry paste in food processor until smooth.
2) Saute onion for 5 minutes.
3) Add 4 Tbs curry paste and cook, stirring, for 2 minutes. Stir in the coconut cream and 1 cup water. Season with salt.
4) Boil, and add zest and tofu. Simmer for 8 minutes, stirring often.
5) Add lime juice and Thai basil.
