Ingredients

  • 2 Tbs oil
  • 1 onion, sliced
  • 400 mL coconut cream
  • zest of 1-2 limes
  • 500 g firm tofu, cut into 2 cm cubes
  • 1 Tbs lime juice
  • 1 Tbs Thai basil, shredded
  • Curry Paste:
    • 10 small green chillies
    • 50 g shallots, peeled
    • 2 cloves garlic
    • 1 cup (45 g) cilantro
    • 1 stem lemongrass, white part only, chopped
    • 2 Tbs fresh ginger, grated
    • 1 Tbs ground coriander
    • 1 tsp ground cumin
    • 1 tsp black peppercorn
    • 1/2 tsp ground tumeric
    • 1 Tbs lime juice

Steps

1) Combine ingredients for curry paste in food processor until smooth. 2) Saute onion for 5 minutes. 3) Add 4 Tbs curry paste and cook, stirring, for 2 minutes. Stir in the coconut cream and 1 cup water. Season with salt. 4) Boil, and add zest and tofu. Simmer for 8 minutes, stirring often. 5) Add lime juice and Thai basil.
