Ingredients
- 1 tsp sesame oil
- 1 Tbs peanut oil
- 2 cloves garlic, crushed
- 1 Tbs ginger, grated
- 1 red chili, finely sliced
- 4 green onions, sliced on the diagonal
- 10 oz tempeh, cut into 2 cm cubes
- 1 lb bok choy
- 2 lb chinese broccoli, chopped
- 1/2 cup mushrrom oyster sauce
- 2 Tbs rice vinegar
- 2 Tbs fresh cilantro leaves
- 1/4 cup toasted cashew nuts
Steps
1) Combine oils in wok. Saute garlic, ginger, chili, and onion for 1-2 minutes.
2) Add tempeh and cook for 5 minutes until golden. Remove and keep warm.
3) Working in batches (if necessary), saute greens with 2 Tbs water for 3-4 minutes until wilted.
4) Combine greens, tempeh, oyster sauce, and vinegar in wok and stir until warm
5) Serve topped with cilantro and nuts.
