Ingredients

  • 1 lb potatos, peeled and quartered
  • Salt
  • 1 1/4 cup flour
  • Sauce:
  • 10 oz heavy cream
  • 4 oz gorgonzala cheese
  • Salt and Pepper
  • 2 Tbs chopped fresh chives

Steps

1) Cook potatoes in boiling, generously salted water for 15-20 min until tender. Drain and mash. 2) Add flour into bowl while continuously kneading, until dough is smooth. 3) Divide dough into 3 portions and roll each into a 2 cm roll. Cut each into 1 inch lengths. Using floured hands, press against fork. 4) Boil water and then reduce to simmering. Cook gnocchi in batches for 2-3 min each until they rise. Lift out with slotted spoon. 5) Put cream into a small pan and bring to boil. Boil rapidly, stirring constantly for 5 min until reduced by 1/3. Remove from head and stir in cheese. Season with salt and pepper. 6) Serve gnocchi, topped with sauce and chives.
