Ingredients

  • 24 hour lead time
    • 3/4 cups dried chickpeas
    • 1 1/3 cups brown rice (dry)
  • Patties
    • 1 onion, finely chopped
    • 4 oz cashew butter
    • 1 egg
    • 1/4 cup tahini
    • 1 tsp ground cumin
    • 1 tsp ground turmeric
    • 2 Tbs tamari
    • 1 Tbs lemon juice
    • 1 vegetable stock cube
    • 1 small carrot, grated
    • 1/2 cup breadcrumbs
    • 2 Tbs oil
  • Bok Choi
    • 12 oz bock choy, trimmed and washed
    • 1/4 cup tamari
  • Coconut Sambal:
    • 4 oz fresh cilantro leaves
    • 1 clove garlic, chopped
    • 1 small green chilli, seeded and chopped
    • 1 tsp garam masala
    • 2 Tbs lime juice
    • 1/4 cup shredded coconut

Steps

1) Soak chickpeas in cold water overnight. Drain. Boil for 1.5 hours. When done, drain, reserving 2 Tbs of water. In the meantime, cook the rice. Rinse well and drain. 2) Saute onion in oil. Set aside 3) Process chickpeas, cashew butter, egg, tahini, cumin, turmeric, tamari, lemon juice, stock cube, and chickpea liquid in a food processor until smooth 4) Transfer to large bowl and add rice, onion, carrot, breadcrumbs. Mix well. Divide into 16 patties. Refrigerate for 30 min. 5) Mix sambal ingredients in a food processor untill smooth. Refrigerate until ready to use. 6) Fry patties over medium heat for 3-4 min. per side. Remove and keep warm. 7) In the same pan, heat the extra oil and fry the bok choy 1-2 minutes until wilted. Add extra tamari and toss through. 8) Place bok choy on palate. Top with 2 patties and a dollop of sambal.

    Sauce is too dry. I tried adding a little extra olive oil, but it wasn't enough. Plain regular yogurt (not greek) might be good too.

    Reduced rice from 3 cups to 1 1/3. 3 cups is final cooked volume

    Coconut should be unsweetened. Can substitute 2 Tbs coconut flour instead of unsweetened shredded coconut

    Dill makes an excellent substitue for cilantro, but I only weighed it out to 2 oz
