Ingredients
- 1lb carrots
- 1 cauliflower
- 2 lbs brussel sprouts
- 1 lb parsnips
- 1 medium butternut squash
- 1.5 cups pumpkin/sunflower seeds
- 3 tbs minced ginger
- 1/3 cup maple syrup
- salt
- freshly ground black pepper
- 1/4 tsp ground nutmeg
- 1.5 cup extra-virgin olive oil
Steps
1) Preheat oven to 425 F and roast the seeds for 6 min.
2) Cut all veggies and in a bowl toss them with olive oil.
3) Season them generously with salt and pepper (I used almost 2 tbs of salt and 1 tbs pepper). Also add ground nutmeg.
4) Spread veggies over the baking sheet. Roast for 30 min until veggies get brown.
Take them out, mix with the seeds.
5) Graze with maple syrup. Then mix again.
6) Roast them more for 25 min until veggies are soft. (It took me only 10 more min to get them soft).
7) Done and Enjoy
