Ingredients

  • 3 lb pork roast
  • 2 cans enchilada sauce
  • 2 tsp ground cumin
  • 1/2 tsp salt
  • 8 enchilada tortillas
  • 1 can black beans
  • 1 large onion chopped
  • 16 oz shredded mexican cheese
  • guacamole
  • sour cream
  • chopped tomatoes

Steps

1) Slowly roast the pork in the oven with 1 can enchilada sauce for 4 hours at 300F. Then pull the meat apart. Take the enchilada sauce drippings in a pan with cumin and salt. 2) Preheat oven at 375 F. Spread 1/2 cooking liquid in a baking dish. Dip the tortillas in the cooking liquid. Then spoon on them 1/2 cup of pork, black beans onions and cheese.Fold the tortilla and place it facing down on the baking dish. 3) Pour remaining can of enchilada sauce on the baking dish with all the tortillas, and sprinkle the remaining cheese. Cover with aluminum foil. Bake for 30 minutes. Remove foil and bake for 15 more min. 4) Serve topped with guacamole, sour cream, tomatoes
