Ingredients
- 2 cups whole milk
- 3 oz minced fresh ginger
- 1 vanilla bean - minced
- 6 egg yolks
- 11/4 cup sugar
- 2 cups whipping cream
Steps
1) Combine milk, ginger, vanilla bean in saucepan
2) Heat until liquid starts scald
3) Remove and let stand 1 hour. Strain out any solids
4) Whisk yolks and sugar in bowl until thick and pale
5) Gradually whisk in milk
6) Stir over medium low heat until thick enough to coat back of spoon (~7 minutes)
7) Strain into bowl
8) Chill, stirring frequently
9) Add cream
10) Freeze in ice cream maker
