Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 1/2 cup water
- 4 tablespoons olive oil, divided
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 cup hot sauce
- 2 tablespoons melted butter
- 1 tablespoon Lemon juice
- 4 ounces herb goat cheese
- 8 ounces mascarpone
- 2 tablespoons Milk
- Black pepper, to taste
- 4 baguettes or sub rolls, cut in half and toasted
- Lettuce and tomato slices, for serving
Steps
1) Heat oven to 400 F
2) In a large bowl toss together the cauliflower, water, 2 tablespoons of the olive oil, and salt
3) Spread the cauliflower on a parchment-lined baking sheet and roast for 20-25 minutes, until lightly browned
4) Meanwhile, whisk together the hot sauce, melted butter, and lemon juice
5) Remove the cauliflower from the oven and toss with the hot sauce mixture
6) Roast for another 6-8 minutes
7) In the bowl of a food processor, combine the goat cheese, mascarpone, remaining olive oil, and milk
8) Pulse until combined
9) Season to taste with salt and black pepper
10) Spread both sides of each of the rolls with the goat cheese-mascarpone spread
11) Add a layer of lettuce and tomato slices to the bottom half of each roll, then top with the roasted cauliflower
12) Serve warm
