Ingredients

  • 1 1 1/2-lb round loaf sourdough bread (10"-12" diameter)
  • 1 lb lean ground beef
  • 3/4 lb spicy bulk pork sausage
  • 1 1/4 cup sliced olives
  • 1 medium onion, chopped
  • 1 cup diced green pepper
  • 2 Eggs
  • 1/4 cup tomato sauce
  • Salt & Pepper
  • 1/4 tsp Cayenne
  • 3 Tbs Butter
  • brown mustard

Steps

1) Slice bread in half horizontally 2) Pull out soft center from each half, leaving walls 1/2"-1" thick 3) Use center to make bread crumbs 4) Mix only 2 cups breadcrumbs with ground beef, sausage, olives, onion, pepper, eggs 5) Form 8"-9" round loaf, and bake 350F 40 minutes 6) Spread cut surface of loaf with butter and mustard 7) Lift cooked meat into bottom of bread loaf 8) Cover with top, and set large plate or other heavy object on the loaf to weigh it down and force juices into bread 9) Cool at least 20 minutes before cutting 10) (May be served cold) 11) Cut into 8-10 wedges
