Ingredients
- 1 lb uncooked penne rigate
- Cooking spray
- 2 pints (4 cup) cherry tomatoes
- 1 clove garlic, minced
- 1 Tbs chopped fresh chives
- 1/2 tsp chopped fresh thyme
- 1/2 tsp chopped fresh oregano
- Salt & Pepper
- 1/2 cup chicken broth
- 2 Tbs chopped fresh parsley
- 1/4 cup fresh chopped basil
- 1/2 cup/3-oz goat cheese, crumbled
Steps
1) Cook pasta
2) Spray skillet with cooking spray
3) Add cherry tomatoes and garlic and saute 2 minutes
4) Add chives and thyme and saute additional 1 minute or until tomatoes are slightly charred and skins are just beginning to burst
5) Add broth and boil
6) Cook until slightly thickened
7) Add tomatoes, parsley, basil, and cheese to pasta
