Ingredients

  • 1 cup Salsa
  • 1 can drained rinsed black beans
  • 1 zucchini, shredded
  • 12 6-inch flour tortillas
  • 3/4 cup (3 oz) grated pepper-jack cheese

Steps

1) Mix salsa, beans, zucchini in bowl 2) For each quesadilla: spread 1/6 of the mixture over half of tortilla, top with 1/6 of the cheese (just over 2 Tbs), and fold over remaining half of tortilla 3) Cook quesadillas on 350F griddle, turning once, until cheese is melted and bottom of tortilla is toasty 4) (about 4 minutes each side) 5) Cut each quesadilla into quarters 6) Serve immediately
