Ingredients

  • Version 1:
  • 1 small zucchini, chopped
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 tsp chili powder
  • 1/2 ground Cumin
  • 8 6" flour tortillas
  • 1/4 cup chopped cilantro
  • 3/4 cup (3 oz) reduced fat cheddar or pepperjack cheese, grated.

Steps

1) Saute veggies until tender and relatively dry 2) Spoon veggie mixture evenly over half of each tortilla 3) Sprinkle each evenly with cheese and cilantro 4) Fold each in half 5) Cook tortillas on griddle at 350F 3-5 minutes each side until well browned
