Ingredients

  • 1/2 cup bulgur
  • 1/4 cup Olive Oil
  • 1 cup onions, chopped
  • 2 cups celery, diced
  • 1 cup carrots,diced
  • 1 Tbs minced garlic
  • 1/4 cup tomato paste
  • 1 1/2 cup white wine
  • 1/2 cup red bell peppers, diced
  • 1/2 cup green bell peppers, diced
  • 1 cup zucchini, diced
  • 1 15-oz can diced tomatoes with juice
  • 1 15-oz can kidney beans, drained
  • 1 15-oz can black beans, drained
  • 4 tsp chili powder
  • 1 Tbs ground cumin
  • 1/2 tsp cayenne pepper
  • 2 tsp dried basil
  • 1 tsp dried oregano

Steps

1) In a large bowl, combine the ingredients with 4 cups water 2) Stir until incorporated. Place 1/3 of mixture in a crockpot or large stockpot 3) Cook the chili in the crockpot on low for 6-8 hours or on stove for 2-3 minutes
