Ingredients
- 1/2 cup bulgur
- 1/4 cup Olive Oil
- 1 cup onions, chopped
- 2 cups celery, diced
- 1 cup carrots,diced
- 1 Tbs minced garlic
- 1/4 cup tomato paste
- 1 1/2 cup white wine
- 1/2 cup red bell peppers, diced
- 1/2 cup green bell peppers, diced
- 1 cup zucchini, diced
- 1 15-oz can diced tomatoes with juice
- 1 15-oz can kidney beans, drained
- 1 15-oz can black beans, drained
- 4 tsp chili powder
- 1 Tbs ground cumin
- 1/2 tsp cayenne pepper
- 2 tsp dried basil
- 1 tsp dried oregano
Steps
1) In a large bowl, combine the ingredients with 4 cups water
2) Stir until incorporated. Place 1/3 of mixture in a crockpot or large stockpot
3) Cook the chili in the crockpot on low for 6-8 hours or on stove for 2-3 minutes
