Ingredients
- 1 Tbs Olive Oil
- 1 sm yellow onion, diced
- 2 cloves Garlic
- 2 tsp minced gingerroot
- 1 Tbs dried parsley
- 1 1/2 tsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp Salt
- 1/4 tsp cayenne pepper
- 2 6-oz cans tomato paste
- 4 cups water
- 1 lb spinach or cheese tortellini
Steps
1) Saute onion, garlic, ginger 3 minutes
2) Stir in spices
3) Add tomato paste & water
4) Simmer, uncovered, 15-20 minutes
5) Meanwhile, cook pasta 12-15 minutes
6) Serve sauce over pasta
