Ingredients

  • 1 Tbs Olive Oil
  • 1 sm yellow onion, diced
  • 2 cloves Garlic
  • 2 tsp minced gingerroot
  • 1 Tbs dried parsley
  • 1 1/2 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp Salt
  • 1/4 tsp cayenne pepper
  • 2 6-oz cans tomato paste
  • 4 cups water
  • 1 lb spinach or cheese tortellini

Steps

1) Saute onion, garlic, ginger 3 minutes 2) Stir in spices 3) Add tomato paste & water 4) Simmer, uncovered, 15-20 minutes 5) Meanwhile, cook pasta 12-15 minutes 6) Serve sauce over pasta
