Ingredients

  • 4 cloves garlic (whole)
  • 12 oz spaghetti
  • 2 lbs. tomatoes, seeded & chopped
  • 3 Tbs balsamic vinegar
  • 2 tsp Olive Oil
  • 2 tsp brown sugar
  • 3/4 tsp dried tarragon
  • Salt & Pepper
  • 1/2 c fresh basil (or mint)
  • 1/3 c Parmesan cheese

Steps

1) Cook garlic in water 2 minutes to blanch, and flavor pasta water 2) Remove; add spaghetti and cook 3) Combine remaining ingredients (except Parmesan cheese) for sauce
