Ingredients
- 4 cloves garlic (whole)
- 12 oz spaghetti
- 2 lbs. tomatoes, seeded & chopped
- 3 Tbs balsamic vinegar
- 2 tsp Olive Oil
- 2 tsp brown sugar
- 3/4 tsp dried tarragon
- Salt & Pepper
- 1/2 c fresh basil (or mint)
- 1/3 c Parmesan cheese
Steps
1) Cook garlic in water 2 minutes to blanch, and flavor pasta water
2) Remove; add spaghetti and cook
3) Combine remaining ingredients (except Parmesan cheese) for sauce
