Ingredients

  • 4 6-in portobello mushrooms
  • Pam
  • 1 cup chopped red tomato
  • 1 cup chopped yellow tomato
  • 1 cup fresh breadcrumbs (3 slices)
  • 1 cup (4 oz) grated mozzarrela
  • 1/4 cup chopped fresh chives
  • Salt & Pepper

Steps

1) Remove stems and brown gills from underside of mushrooms using a spoon 2) Discard 3) Place mushrooms, gill side down, on foiled-lined baking sheet coated with Pam 4) Broil on high 5 minutes 5) Combine tomatoes, breadcrumbs, cheese, and chives 6) Turn mushrooms over, and fill with tomato mixture 7) Broil 5 minutes more, until cheese melts 8) NOTE: Cook longer!
