Ingredients
- 1/3 cup brown rice
- 1 (14 oz) can diced tomatoes
- 1 (15 oz) can black beans
- 1 (8 3/4 oz) can corn
- 1/2 cup chopped onion
- 2-3 jalapeno peppers, minced
- 1/4 cup chopped green pepper
- 4 large bell peppers
- 1/4 cup cilantro
- 3/4 cup (3 oz) grated 2% cheese
Steps
1) Combine rice, tomatoes, and 2 Tbs water in pan
2) Boil, then simmer 20 minutes
3) Drain beans and corn
4) Add beans, corn, onion, jalapeno and green peppers to rice
5) Boil, then continue simmering 20 min
6) Boil to remove excess water
7) Meanwhile, cut tops off bell peppers and remove seeds
8) Simmer in boiling water 5 minutes
9) Add cilantro and half the cheese to rice mix
10) Fill peppers, place in 8" square pan, and sprinkle with remaining cheese
11) Bake 5 min at 400F
