Ingredients
- 1/2 large onion, chopped
- 2 cloves Garlic
- 2 10-oz pkg chopped spinach
- 1 can diced chilies
- 1/2 cup chopped cilantro
- Salt (1 tsp)
- 10 fresh corn tortillas
- 1 1/4 cup (5 oz) grated 2% cheese
- Sauce 1:
- 2 tsp Butter
- 1 Tbs Flour
- 1 cup skim milk
- 1 cup light sour cream
- 1/2 tsp salt
- Sauce 2:
- 1 can enchilada sauce
Steps
1) Saute onion and garlic
2) Add spinach, chilies and cilantro
3) Salt to taste
4) Warm tortillas in microwave to soften. Soak a paper towel with water and place on counter.
5) Place tortilla on wet paper towel. Brush both sides with water.
Spread 2 Tbs cheese, then 2 Tbs spinach mixture down center of each tortilla. Roll, and place in greased 9x13 pan
6) White Sauce: melt butter, add flour. Stir in milk and then sour cream.
7) Cover tortillas with sauce
8) Cover, and bake for 20-25 minutes at 350F
