Ingredients

  • 1/2 large onion, chopped
  • 2 cloves Garlic
  • 2 10-oz pkg chopped spinach
  • 1 can diced chilies
  • 1/2 cup chopped cilantro
  • Salt (1 tsp)
  • 10 fresh corn tortillas
  • 1 1/4 cup (5 oz) grated 2% cheese
  • Sauce 1:
    • 2 tsp Butter
    • 1 Tbs Flour
    • 1 cup skim milk
    • 1 cup light sour cream
    • 1/2 tsp salt
  • Sauce 2:
    • 1 can enchilada sauce

Steps

1) Saute onion and garlic 2) Add spinach, chilies and cilantro 3) Salt to taste 4) Warm tortillas in microwave to soften. Soak a paper towel with water and place on counter. 5) Place tortilla on wet paper towel. Brush both sides with water. Spread 2 Tbs cheese, then 2 Tbs spinach mixture down center of each tortilla. Roll, and place in greased 9x13 pan 6) White Sauce: melt butter, add flour. Stir in milk and then sour cream. 7) Cover tortillas with sauce 8) Cover, and bake for 20-25 minutes at 350F
