Ingredients

  • 1 medium onion - chopped
  • 4 cloves garlic, minced
  • 2 Tbs Olive Oil
  • 1 15-oz can black beans, rinsed and drains
  • 1 14.5 oz stewed tomatoes
  • 1/2 cup Salsa
  • 1/4 tsp Salt
  • 1/2 tsp Cayenne
  • 2 cup cooked brown rice
  • 1/2 cup shredded cheese
  • 1/4 cup onion - chopped

Steps

1) Cook onion and garlic to tender 2) Add beans, tomatoes, salsa, salt, cayenne 3) Boil & simmer 15 minutes, uncovered 4) Serve over rice, topped with onion and cheese
