Ingredients
- 1 medium onion - chopped
- 4 cloves garlic, minced
- 2 Tbs Olive Oil
- 1 15-oz can black beans, rinsed and drains
- 1 14.5 oz stewed tomatoes
- 1/2 cup Salsa
- 1/4 tsp Salt
- 1/2 tsp Cayenne
- 2 cup cooked brown rice
- 1/2 cup shredded cheese
- 1/4 cup onion - chopped
Steps
1) Cook onion and garlic to tender
2) Add beans, tomatoes, salsa, salt, cayenne
3) Boil & simmer 15 minutes, uncovered
4) Serve over rice, topped with onion and cheese
