Ingredients

  • 3/4 cup uncooked brown rice
  • 1 1/2 cup water
  • 1 15-oz can black beans, drained
  • 1 11-oz can Mexicorn, drained
  • 1 sm can diced chilies
  • 1 6-oz can tomato paste
  • 1 cup Salsa
  • 1 cup reduced-fat sour cream
  • 1 cup (4 oz) grated cheddar
  • 1/4 tsp Pepper
  • 1/2 cup chopped red onion
  • 1 diced red hot pepper
  • 1 2-1/4-oz can sliced black olives
  • 1 cup Mex-cheddar cheese blend

Steps

1) Cook rice 2) Sautee onion 3) Combine beans, corn, chilies, tomato paste, salsa, sour cream, cheddar, pepper, and rice 4) Pour into greased 2 1/2 quart baking dish 5) Sprinkle with onions and olives 6) Bake, uncovered, at 350F for 30 min 7) Sprinkle with Mex-cheddar cheese, Bake 5-10 minutes longer, until cheese melted 8) Let stand 10 min before serving
