Ingredients

  • 1 med sweet red pepper, sliced
  • 1 cup julienned carrots
  • 1 cup quartered mushrooms
  • 1 cup broccoli florets
  • 1 med onion, sliced into rings
  • 1 med yellow summer squash, sliced
  • 1/4 cup red wine/cider vinegar
  • 12 flour tortillas
  • 3/4 cup shredded mozzarella
  • Salsa (optional)

Steps

1) Sprinkle vinegar over veggies, tossing to coat 2) Spread into 2 9x15in baking pans 3) Bake at 425F for 20-25 minutes 4) Spoon about 3/4 cup vegetables on each tortilla; sprinkle with Tbs cheese 5) Top with salsa 6) Fold sides up and secure with a toothpick 7) Place on baking sheet, and broil 4-6 inches from the heat for 2 minutes or until cheese is melted
