Ingredients
- VEGGIES:
- 1 lb eggplant, peeled
- 1 sm red onion
- 2 med yellow peppers
- 2 tsp Olive Oil
- 1/2 tsp Salt
- 8 oz ziti or penne pasta
- 10 oz frozen chopped spinach
- 8 oz tomato sauce
- 1/2 cup part-skim mozzarella
- Sauce:
- 1 cup chopped onion
- 3-4 clove Garlic
- 1/2 tsp crushed red pepper flakes
- 1 14-oz can crushed tomatoes
- 1 14-oz can diced tomatoes
- 2 Tbs parsley
- Salt & Pepper
- 1/8 tsp thyme
Steps
1) Cut veggies into 1" pieces
2) Put in 9x13" greased pan
3) Toss with oil and salt
4) Bake uncovered at 400F for 35-40 minutes
5) Saute onion for sauce until tender
6) Add garlic and red pepper, stir for 1 min
7) Add rest of sauce ingredients
8) Simmer 15-20 minutes
9) Cook pasta as directed
10) Spread 1/2 cup sauce in greased 2 qt casserole
11) Layer 1/4 of the pasta, 1/4 of the vegetables, 1/4 of the spinach, and 1/2 cup sauce
12) Repeat 3 times, ending with sauce
13) Pour tomato sauce over the top
14) Bake at 350F for 30 minutes
15) Top with cheese, and bake 10-15 minutes more
