Ingredients

  • 3 cup (2 oz) grated cheese
  • 3 egg yolks
  • 5 Egg whites
  • 1 Tbs margarine
  • 2 Tbs white flour
  • 1 cup Milk
  • 1/2 tsp Salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1 small unseasoned pumpkin puree
  • 1 apple, peeled and sliced thinly
  • 1 Tbs currants

Steps

1) Spray 1 1/2 quart souffle dish with Pam 2) Sprinkle with a little bit of the cheese 3) Melt margarine 4) Add flour, then milk, and thicken 5) Add spices, and the rest of the cheese 6) Quickly whisk in the egg yolks 7) Stir in pumpkin 8) Beat egg whites until stiff 9) Fold egg yolk mixture into beaten whites 10) Bake at 375F for 45 minutes
