Ingredients

  • 1/2 lb large portabella mushrooms, sliced and halved
  • 12 oz fettuccini (uncooked)
  • 1 Tbs Olive Oil
  • 1 tsp Salt & Pepper
  • 1 Tbs Garlic
  • 1/4 tsp crushed red pepper
  • 1 15-oz can crushed tomatoes
  • 1/4 cup broth
  • 1/4 cup Red Wine
  • 8 oz asparagus or green beans, 1" cut

Steps

1) Cook fettucini 2) Sautee mushrooms in 1 1/2 tsp olive oil (add water if ness) 3) Remove and sprinkle with salt & pepper 4) Sautee garlic & red pepper in rest of oil 5) Add tomato, broth (and wine) 6) Simmer 5 min 7) Add asparagus, cover and simmer 1 min 8) Add mushrooms and serve with fettuccini
