Ingredients

  • 1/2 small onion, chopped
  • 1 tsp chili powder
  • 1/2 tsp Cumin
  • 1/4 tsp cinnamon
  • 1 Tbs water
  • 1 15-oz can black beans, rinsed
  • 1/4 cup can diced green chilies
  • 1 16-oz pkg pre-baked Italian bread shell crust
  • 1 cup Salsa
  • 1 cup (4-oz) grated reduced-fat cheddar
  • 3/4 cup fresh tomato
  • 1/2 cup frozen corn, thawed
  • 1/2 cup chopped green pepper
  • 3 Tbs sliced black olives
  • 1/2 cup reduced-fat sour cream

Steps

1) Water-saute onion and spices 2) Remove from heat and add beans and chilies 3) Transfer half to food processor, cover and puree until smooth 4) Spread pureed beans over crust 5) Layer in order: salsa, half of the cheese, remaining bean mixture, tomato, corn, green pepper, olives, and remaining cheese 6) Bake 450F 10-12 minutes until crust is golden brown 7) Serve with sour cream
