Ingredients

  • 1 cup elbow macaroni
  • 1 diced onion
  • 1 diced green pepper
  • 2 diced celery stalks
  • 2 14-oz can diced tomato
  • 1 14-oz can red or pinto beans
  • 1 sm (11 oz) can corn
  • 1 1/2 Tbs chili powder
  • 2 tsp oregano
  • 1 tsp Cumin
  • Salt & Pepper

Steps

1) Cook pasta 8-10 minutes 2) Saute veggies 3) Add beans and tomatoes, and cook for 15 minutes 4) Add macaroni 5) Cook 5 minutes more 6) Remove from heat and let stand 5-10 minutes
