Ingredients
- 1 cup elbow macaroni
- 1 diced onion
- 1 diced green pepper
- 2 diced celery stalks
- 2 14-oz can diced tomato
- 1 14-oz can red or pinto beans
- 1 sm (11 oz) can corn
- 1 1/2 Tbs chili powder
- 2 tsp oregano
- 1 tsp Cumin
- Salt & Pepper
Steps
1) Cook pasta 8-10 minutes
2) Saute veggies
3) Add beans and tomatoes, and cook for 15 minutes
4) Add macaroni
5) Cook 5 minutes more
6) Remove from heat and let stand 5-10 minutes
