Ingredients

  • 1 cup raw lentils
  • 1 bay leaf
  • 1 clove Garlic
  • 1 tsp ginger
  • 2 carrots, julliened
  • 12 scallions, cut in 1" lengths
  • 10 oz spinach, wash, stemmed, chopped (or frozen, drained)
  • 2 Tbs soy sauce
  • 2 Tbs dry white wine

Steps

1) Pour lentils into pan with 3 cups water 2) Boil, then add bay leaf 3) Cover and simmer until tender (30-40 min) 4) Meanwihle, water-sautee garlic and ginger 5) Add carrot and scallion, and cook 1 min 6) Add spinach, and stir to wilt 7) Add soy sauce and wine 8) Drain lentils and remove bay leaf 9) Add to vegetables
