Ingredients
- 1 Tbs Olive Oil
- 2 cups eggplant, 1/2" cubes
- Salt
- Pepper
- 1 Tbs Lemon juice
- 2 tsp balsamic vinegar
- 1 cup chopped spinach leaves
- 1/2 cup seeded chopped tomato
- 1 cup humus
- 2 10" tortillas
Steps
1) Saute eggplant in oil
2) Season w/ salt & pepper
3) Cook until translucent (5 min), browning on all sides
4) Remove from heat and toss w/ 2tsp lemon juice and vinegar
5) Toss spinach and tomato
6) Add salt, pepper, and 1tsp lemon juice
7) Add eggplant
8) Spread humus over tortillas, leaving 1" border
9) Fill w/ eggplant & roll
