Ingredients

  • 3 cloves Garlic
  • 1 tbs fresh grated ginger
  • 1/2 cup chopped onion
  • *1 tsp mustard seed
  • *2 Tbs ground coriander
  • *1 tsp ground tumeric
  • * 1/4 tsp Cayenne
  • @1 cup thin-sliced carrots
  • @ 1/2 lb string beans in 1" lengths
  • @2 bell peppers, sliced
  • @1 small zucchini, sliced
  • @1 hot green pepper, minced
  • @1 cup unsweetened coconut flake
  • Salt
  • 2 tsp sugar
  • 2/3 cup plain yogurt

Steps

1) Saute garlic, ginger and onions 2) Add *-spices, stirring for 2 min 3) Add @-vegetables 4) Stir for a few minutes, then add coconut, 2 cup H20, salt, sugar 5) Simmer covered ~ 20 min, until liquid reduced 6) Add yogurt 7) Serve over rice
