Ingredients
- 3 cloves Garlic
- 1 tbs fresh grated ginger
- 1/2 cup chopped onion
- *1 tsp mustard seed
- *2 Tbs ground coriander
- *1 tsp ground tumeric
- * 1/4 tsp Cayenne
- @1 cup thin-sliced carrots
- @ 1/2 lb string beans in 1" lengths
- @2 bell peppers, sliced
- @1 small zucchini, sliced
- @1 hot green pepper, minced
- @1 cup unsweetened coconut flake
- Salt
- 2 tsp sugar
- 2/3 cup plain yogurt
Steps
1) Saute garlic, ginger and onions
2) Add *-spices, stirring for 2 min
3) Add @-vegetables
4) Stir for a few minutes, then add coconut, 2 cup H20, salt, sugar
5) Simmer covered ~ 20 min, until liquid reduced
6) Add yogurt
7) Serve over rice
