Ingredients
- 6 med carrots, sliced
- 1 med potato, cubed
- 15-oz can garbanzo beans, drained
- 8 oz green beans, 1" pieces
- 1 cup chopped onion
- 3 cloves Garlic
- 2 Tbs quick-cooking tapioca
- 2 tsp curry powder
- 1 tsp ground coriander
- 1/2 tsp crushed red pepper
- Salt
- 8 tsp cinnamon
- 1 3/4 cup stock
- -----
- 16 oz can diced tomatoes
- 2 cup hot rice
Steps
1) Combine all but rice and tomatoes in 4-5qt crock pot
2) Cover, cook on low 8-10 hours or high 4-5 hours
3) Stir in tomatoes
4) Serve over rice
