Ingredients

  • 6 med carrots, sliced
  • 1 med potato, cubed
  • 15-oz can garbanzo beans, drained
  • 8 oz green beans, 1" pieces
  • 1 cup chopped onion
  • 3 cloves Garlic
  • 2 Tbs quick-cooking tapioca
  • 2 tsp curry powder
  • 1 tsp ground coriander
  • 1/2 tsp crushed red pepper
  • Salt
  • 8 tsp cinnamon
  • 1 3/4 cup stock
  • -----
  • 16 oz can diced tomatoes
  • 2 cup hot rice

Steps

1) Combine all but rice and tomatoes in 4-5qt crock pot 2) Cover, cook on low 8-10 hours or high 4-5 hours 3) Stir in tomatoes 4) Serve over rice
