Ingredients
- 1 cup uncooked brown rice
- 1 16-oz can kidney beans, rinsed and drained
- 1 large onion, chopped
- 1 Tbs oil
- 1 14 1/2 oz can diced tomatoes and green chilies, undrained
- 2 tsp chili powder
- 1/4 tsp Salt
- 1 1/4 cups shredded reduced-fat cheddar, divided
Steps
1) Cook rice according to directions
2) Transfer to a bowl, and add beans
3) Saute onions
4) Stir in tomatoes, chili powder, salt
5) Boil, the remove from heat
6) Layer in 2 quart baking dish sprayed with Pam: 3 of the rice mixture, cheese and tomato mixture
7) Repeat layers
8) Top with remaining rice and tomatoes (reserve remaining cheese)
9) Bake covered at 350F for 30 minutes
10) Sprinkle with remaining cheese, and bake, uncovered, 5-10 minutes longer, or until cheese is melted
