Ingredients
- 8 tortillas
- Sauce:
- 1/2 large onion, chopped
- 4 cloves Garlic
- 1/2 can diced green chilis
- 14-oz can diced tomatoes
- 1 cup tomato juice or thin puree
- 1/4 tsp oregano
- 1/4 tsp basil
- 1 cup broth
- 1 1/2 Tbs cornstarch in 1 Tbs water
- Filling:
- 1/2 lb. grated 2% cheese
- 1/4 cup sliced black olives
- 1 sm zucchini, grated (optional)

Steps
1) Saute onion & garlic in skillet
2) Add tomatoes, juice & herbs
3) Simmer
4) Add broth & cornstarch, and simmer 10 minutes
5) Warm tortillas in the microwave to soften them
6) Take 1 tortilla at a time and place it on the sauce
7) Remove, and spread filling ingredients on a line down the center of the saucy side
8) Roll and place in greased 9x13 pan
9) Pour remaining sauce over them
10) Bake 15-20 minutes at 350F
