Ingredients
- 1 1/2 cups cubed, peeled butternut
- 4 cloves garlic, unpeeled
- 3/4 cup bulgar
- 1/4 cup dry white wine
- 13/4 cup water
- 1/2 tsp Salt
- 1 Tbs fresh chopped sage
- 1 Tbs fresh chopped cilantro
- 1/2 ounce low-fat grated cheese
Steps
1) Combine squash and garlic in roasting pan
2) Bake 20 minutes at 400F, until squash is tender
3) Meanwhile, brown bulgar ~1 minute in pam-coated 1-qt pan
4) Add wine and heat 1 minute more
5) Add water and salt
6) Bring to boil, then cover and simmer 15 minutes on low
7) Peel and mince garlic
8) Add squash, garlic, and sage, & cilantro to bulgar
9) (For grain side dish, omit cheese)

Substituted vegetable broth for water
Basil for sage.
Whole kernel oats for bulgar.
Doubled recipes (1.5 c grain)
Probably need to dial down the liquid (2.5-3 cups)
Used goat cheese medalions
