Ingredients
- 1 Tbs Butter
- 2 Tbs Flour
- 1 1/2 cup skim milk
- 2 egg yolks
- 1 1/2 cup chopped cooked broccoli
- 2 Tbs Chopped walnuts
- 1/4 cup minced onion
- 2 Tbs Parmesan cheese
- salt & Pepper
- 6 Egg whites
- Sauce:
- 2 tsp Butter
- 1 Tbs Flour
- 1/2 cup Milk
- 1 Egg yolk
- 1/4 cup grated cheese
- 1/2 cup light sour cream
- 11/2 tsp horseradish
- 1/4 tsp Dijon mustard
Steps
1) Melt butter
2) Add flour
3) Gradually add milk
4) Whisk in egg yolks, one at a time
5) Stir in broccoli, walnuts, onion, and cheese
6) Season with salt and pepper
7) Beat egg white until stiff
8) Fold into yolk mixture
9) Bake 40-45 minutes at 375F
10) Make sauce about 10 minutes before souffle is done
11) Melt butter
12) Add flour
13) Gradually add milk
14) Whisk in egg yolk
15) Add grated cheese and stir to melt
16) Stir in sour cream, horseradish, mustard, salt and pepper
