Ingredients

  • 1 cup uncooked brown rice
  • 1 Tbs Olive Oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 3 cloves garlic, minced
  • 1/2 cup water
  • 1 tsp chili powder
  • 1/2 tsp Salt
  • 1/2 tsp Cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/4 tsp Cayenne
  • 1 15-oz can black beans, rinsed
  • 1/4 cup grated cheese

Steps

1) Cook rice according to directions 2) Sautee onion, bell pepper, garlic 3) Add water, spices, and beans 4) Boil, then simmer, covered, 10 minutes, until heated 5) Serve beans over rice, topped with cheese
