Ingredients
- 1/2 cup Butter
- 1/2 cup Flour
- 2 cup Mushrooms
- 2 scallion, chopped
- 4 cups chicken broth
- 4 cups Milk
- 8 oz Cream cheese
- 1 1/2 cup shredded Swiss cheese
- 1/4 tsp ground nutmeg
- 1/2 tsp Salt
- 1 tsp Pepper
- 10 oz Frozen spinach, thawed
- 1 cup grated Parmesan
Steps
1) melt the butter in large soup pot over medium heat
2) Add flour and whisk until golden
3) Add mushrooms and scallions and saute until tender, about 3 minutes
4) Whisk in the chicken broth and milk and stir until thickened, 5-10 minutes
5) Add the cream cheese, swiss cheese, and spices. Stir until cheese is melted
6) Add spinach and stir
7) Simmer for 10-15 minutes, stirring gently.
