Ingredients

  • 1/2 cup chopped onion
  • 1 Tbs minced fresh ginger
  • 1 clove garlic, minced
  • 1 1/4 cup water
  • 1 15-oz can diced tomato
  • 1/2 tsp chili paste with garlic
  • Salt
  • 1/4 cup light coconut milk

Steps

1) Saute onion, ginger, and garlic 2 minutes 2) Add water and tomatoes 3) Bring to boil, and simmer 5 minutes 4) Add chili paste and salt 5) Process soup in blender until smooth 6) Add coconut milk, heat until thoroughly warmed
