Ingredients
- 1 1/2 lb diced yellow squash
- 1 cup corn kernels
- 1 cup chopped red or yellow bell pepper
- 1/2 cup chopped sweet onion
- 14-oz vegetable broth
- 13/4 cup whole milk
- 1/2 Tbs Salt
- 1/4 tsp pepper
Steps
1) Combine squash, pepper, onion, and broth in dutch onion
2) Simmer 20 minutes
3) Puree in blender until smooth
4) Combine puree, milk, corn, salt and pepper in pan
5) Cook over low heat until thoroughly heated, stirring occasionally
