Ingredients
- 5-6 cup chicken broth
- 1 14-oz can diced tomatoes
- 1 14-oz can crushed tomatoes
- 1 lb boneless skinned chick breast, cut in 1/2 inch cubes
- 1 lg onion, chopped
- 3 cup minced fresh cilantro
- 1 4-oz can chopped green chilies
- 1 clove Garlic
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 3 cup frozen corn
- 24 chips Baked tortilla chips
- 4 oz grated light cheddar/taco cheese
Steps
1) Combine all but corn, chips, and cheese in large pot
2) Boil, the reduce heat and simmer 1hr
3) Add corn and cook 15 minutes longer
4) Top each serving with 3 tortilla chips and 2 Tbs cheese
