Ingredients
- 1 med onion, diced
- 1 1/2 tsp minced garlic, divided
- 1/2 lb plum tomatoes, seeded and diced
- 1 tsp grated lemon peel
- 1/4 tsp crushed red pepper flakes
- 1 cup clam juice
- 1 Tbs tomato paste
- 1/2 tsp Salt
- 1 lb orange roughy or red snapper fillets, cubed
- 1 lb uncooked large shrimp
- 1/2 lb scallops
- 3 cup minced fresh parsley
Steps
1) Spray pan with Pam to saute onion garlic until tender, adding a few drops of water if needed
2) Add tomatoes, lemon peel and red pepper
3) Cook 2 minutes
4) Add clam juice, wine, tomato paste and salt
5) Cover and simmer 10 minutes
6) Add fish and parsley
7) Cover and cook 8-10 minutes or until fish flakes easily, shrimp is pink, and scallops are opaque
