Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 clove garlic, minced
- 1/4 tsp Pepper
- 1 Tbs Butter
- 4 cups chicken broth
- 1/2 cup dried lentils
- 1/2 tsp dried rosemary
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 1/2 cup cooked lean ham (or poultry)
- 3/4 cup sliced carrots (80 g)
- 1/2 cup quick-cooking barley
- 1 14-1/2-oz can diced tomatoes
Steps
1) Sautee onion, celery, garlic in butter until tender
2) Stir in broth, lentils, and herbs
3) Boil, then cover and simmer 20 min
4) Add ham and carrots
5) Cover and simmer 10 minutes
6) Return to boil, and add barley
7) Cover and simmer 15 minutes, until lentils and carrots tender
