Ingredients
- 1 lb. lean ground beef
- 1 28-oz can diced tomatoes
- 1 med onion, chopped
- 1 green pepper, chopped
- 1 can fat-free vegetarian chili beans
- 1 8-oz can tomato sauce
- 2 Tbs chili powder
- 2 Tbs fresh parsley
- 1 Tbs dried basil
- 2 tsp ground cumin
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 3/4 tsp Pepper
- Cayenne
- 6 Tbs reduced-fat grated cheese
- 1 Tbs minced chives
Steps
1) Brown beef
2) Combine all ingredients except cheese and chives in crock pot
3) Cook LOW 6-8 hours
4) Serve with cheese and chives

This also works great in the instant pot. Cook on Chili setting (~20 minutes). You can prepare ahead of time and let sit on "keep warm" for a few hours
