Ingredients

  • 1 lb. lean ground beef
  • 1 28-oz can diced tomatoes
  • 1 med onion, chopped
  • 1 green pepper, chopped
  • 1 can fat-free vegetarian chili beans
  • 1 8-oz can tomato sauce
  • 2 Tbs chili powder
  • 2 Tbs fresh parsley
  • 1 Tbs dried basil
  • 2 tsp ground cumin
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 3/4 tsp Pepper
  • Cayenne
  • 6 Tbs reduced-fat grated cheese
  • 1 Tbs minced chives

Steps

1) Brown beef 2) Combine all ingredients except cheese and chives in crock pot 3) Cook LOW 6-8 hours 4) Serve with cheese and chives

    This also works great in the instant pot. Cook on Chili setting (~20 minutes). You can prepare ahead of time and let sit on "keep warm" for a few hours
