Ingredients

  • 12 oz broccoli florets
  • 2 Tbs Butter
  • 1 onion, chopped
  • 1 leek, chopped (white part)
  • 1 sm potato, coarsly chopped
  • 2 1/2 cups chicken stock
  • 1 1/4 cups Milk
  • 3 Tbs Heavy Cream
  • 4 oz Stilton/blue cheese, crumbled
  • Salt & Pepper

Steps

1) Melt butter & saute onion and leek. 2) Add broccoli and potato, then stock. 3) Cover and simmer 15-20 minutes. 4) Puree until smooth & return to pot. 5) Add cream, milk, salt and pepper. 6) Reheat and add cheese for 1 minute
