Ingredients
- 1/4 cup skim milk
- 1/4 cup Flour
- Salt & Pepper
- 4 4-oz boneless chicken breast
- 1 can stewed tomatoes (or diced tomatoes with seasonings)
- 1 1/2 Tbs cornstarch
- 3/4 cup stock
- chives
Steps
1) Add salt & pepper (and any other seasoning) to flour
2) Dip chicken in milk then flour, turning to coat all sides
3) Spray skillet with Pam
4) Cook chicken over medium heat, turning one, until brown on both sides
5) Remove
6) Mix cornstarch in stock
7) Add to skillet
8) Boil to thicken
9) Add tomatoes, then chicken
10) Simmer until done - about 10 minutes
11) Top with chives
