Ingredients

  • 8 oz ziti/penne pasta
  • 1/4 pound ground turkey breast
  • 1 15-oz can tomato sauce
  • 1 15-oz can tomato juice
  • 3/4 cup mozzarella cheese, divided
  • 4 oz sliced mushrooms
  • 3 oz cooked spinach
  • 1/4 cup reduced fat ricotta
  • 2 tsp Italian Seasoning
  • 1 garlic clove
  • 1/4 tsp garlic powder
  • 1/4 tsp crushed red pepper
  • Pepper
  • 1/4 cup water
  • 1 Tbs parmesean cheese
  • 3/4 oz sliced turkey pepperoni

Steps

1) Cook pasta 2) Cook turkey and mushrooms in skillet until no longer pink 3) Transfer to a large bowl 4) Add 14-oz can tomato sauce, 1/2 cup mozzarella, spinach, ricotta, seasonings 5) Drain pasta and add 6) Transfer to 7x11" pan 7) Pour on tomato juice 8) Top with pepperoni and cheeses 9) Bake 25-30 minutes at 350F
