Ingredients
- 8 oz ziti/penne pasta
- 1/4 pound ground turkey breast
- 1 15-oz can tomato sauce
- 1 15-oz can tomato juice
- 3/4 cup mozzarella cheese, divided
- 4 oz sliced mushrooms
- 3 oz cooked spinach
- 1/4 cup reduced fat ricotta
- 2 tsp Italian Seasoning
- 1 garlic clove
- 1/4 tsp garlic powder
- 1/4 tsp crushed red pepper
- Pepper
- 1/4 cup water
- 1 Tbs parmesean cheese
- 3/4 oz sliced turkey pepperoni
Steps
1) Cook pasta
2) Cook turkey and mushrooms in skillet until no longer pink
3) Transfer to a large bowl
4) Add 14-oz can tomato sauce, 1/2 cup mozzarella, spinach, ricotta, seasonings
5) Drain pasta and add
6) Transfer to 7x11" pan
7) Pour on tomato juice
8) Top with pepperoni and cheeses
9) Bake 25-30 minutes at 350F
