Ingredients
- 1 medium naval orange
- 4 tsp cornstarch
- 1/4 tsp ground/1 tsp grated ginger
- 1 cup chicken broth
- 2 Tbs soy-sauce
- 2 Tbs chili sauce
- 1/4 tsp hot pepper sauce
- 1 lb chicken breast, in 1" pieces
- 2 cloves Garlic
- 2 cups broccoli florets
- 1 sweet red pepper, julienned
- 1 sweet yellow pepper, julienned
- 1/2 cup shredded carrot
- 3 cup (opt) cashews
- 3 cups hot rice (1 cup uncooked)
Steps
1) Grate orange peel
2) Peel and section orange
3) Combine cornstarch, ginger, broth, soy sauce, chili sauce, hot pepper sauce and orange peel
4) Stir-fry chicken and garlic in oil until lightly browned
5) Add broccoli, peppers and carrot, and cook 5 minutes until veggies are crisp-tender
6) Add broth mixture, boil, and cook until thickened
7) Remove from heat and stir in orange sections and optional cashews
8) Serve with rice
