Ingredients
- 1 Tbs oil, divided
- 4 cup broccoli florets
- 1 Tbs ground ginger, divided
- 2 Tbs water
- 1/2-1v1/2 tsp crushed red pepper
- 1 lb boneless chicken breast, cut in strips
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 2 Tbs hoisin sauce
- 2 Tbs soy sauce
- 1 tsp cornstarch
- 2 Tbs chopped salted peanuts
Steps
1) Sautee broccoli & 2 tsp ginger 1 min
2) Add water, cover, and cook 2 minutes until broccoli is crisp tender
3) Remove broccoli
4) Brown chicken, along with remaining ginger, red pepper & garlic
5) Combine broth, hoisin, soy, & cornstarch
6) Add to chicken, cook 1 minute to thicken
7) Add broccoli, sprinkle with peanuts, & serve
