Ingredients
- 4 skinned, boned chicken breasts
- Yogurt Marinade
- 1 clove Garlic
- 1 Tbs fresh ginger root
- 1 1/2 tsp catsup
- 1 1/2 tsp curry powder
- 1 1/2 tsp coriander
- 1 1/2 tsp Cumin
- 1 1/2 tsp Corriander
- 1/4 tsp tumeric
- Cayenne
- 1/2 cup plain nonfat yogurt
- Raita
- 1 1/2 cups plain nonfat yogurt
- 1 cucumber, peeled, seeded, and diced
- 1 small tomato, seeded & diced
- 1/2 tsp coriander
- 1/2 tsp curry
- Cayenne
- Salt
- Fresh cilantro sprigs
Steps
1) Mix marinade
2) Score two slits on each side of chicken breasts
3) Marinade (a few minutes, or as long as overnight)
4) Brush broiler rack with oil, broil chicken, turning and basting with remaining marinade, 8-12 minutes (until juices run clear and marinade looks slightly charred)
5) Drain yogurt on doubled paper towel for about 10 minutes
6) Combine with remaining raita ingredients
7) Serve chicken with cilantro garnish
