Ingredients
- 1 c thick coconut milk
- 3 c thin coconut milk
- 1 portion Green Curry Paste
- 1 lb chicken breasts
- 8 kaffir lime leaves
- 11/2 c cubed eggplant
- 3 3" red chilies, deseeded and sliced
- 3 T fish sauce
- 11/2 brown sugar
- 20 basil leaves
Steps
1) Heat thick coconut milk 2 min, do not boil
2) Add curry paste
3) Thicken
4) Add chicken & 1 c thin milk
5) Boil, add remaining milk
6) Add lime leaves, eggplant, most of the chilies
7) Simmer 10 minutes
8) Add fish sauce, sugar and basil leaves
9) Serve with chilies
